Why is the 5th/6th amendment important?

Both flow from practices occurring in Great Britain. In Britain, if you were found innocent in one court, the king could try you again and again until he got the verdict he wanted, and many people were simply put in prison and never given a trial. The 5th and 6th amendments were to eliminate this.
